Classic Thai stir-fried rice noodles with chicken, egg, and peanuts
Ingredients
- • 200 grams Rice Noodles
- • 3 tablespoons Vegetable Oil
- • 1/2 pieces Onion
- • 2 cloves Garlic
- • 150 grams Chicken Breast
- • 2 pieces Eggs
- • 1 1/2 cups Bean Sprouts
- • 1/4 cups Garlic Chives
- • 1/4 cups Peanuts
- • 1 portion Pad Thai Sauce
- • 1 piece Lime
Instructions
- 1 Heat 2 tbsp oil in a large non-stick pan over high heat. Add garlic and onion, cook for 30 seconds
- 2 Add chicken and cook for 1.5 minutes until mostly cooked through
- 3 Push to one side of the pan, pour egg in on the other side. Scramble using wooden spoon (add touch of extra oil if needed), then mix into chicken
- 4 Add bean sprouts, noodles then sauce
- 5 Toss gently for about 1.5 minutes until sauce is absorbed by the noodles
- 6 Add garlic chives and half the peanuts. Toss through quickly then remove from heat
- 7 Serve immediately, sprinkled with remaining peanuts and lime wedges on the side. Squeeze over lime juice to taste before eating
