Classic Thai stir-fried rice noodles with chicken, egg, and peanuts

Ingredients

  • 200 grams Rice Noodles
  • 3 tablespoons Vegetable Oil
  • 1/2 pieces Onion
  • 2 cloves Garlic
  • 150 grams Chicken Breast
  • 2 pieces Eggs
  • 1 1/2 cups Bean Sprouts
  • 1/4 cups Garlic Chives
  • 1/4 cups Peanuts
  • 1 portion Pad Thai Sauce
  • 1 piece Lime

Instructions

  1. 1 Heat 2 tbsp oil in a large non-stick pan over high heat. Add garlic and onion, cook for 30 seconds
  2. 2 Add chicken and cook for 1.5 minutes until mostly cooked through
  3. 3 Push to one side of the pan, pour egg in on the other side. Scramble using wooden spoon (add touch of extra oil if needed), then mix into chicken
  4. 4 Add bean sprouts, noodles then sauce
  5. 5 Toss gently for about 1.5 minutes until sauce is absorbed by the noodles
  6. 6 Add garlic chives and half the peanuts. Toss through quickly then remove from heat
  7. 7 Serve immediately, sprinkled with remaining peanuts and lime wedges on the side. Squeeze over lime juice to taste before eating
