Authentic Thai Penang curry paste with rich, complex flavors
Ingredients
- • 10 pieces Dried Chilis
- • 40 grams Galangal
- • 8 cloves Garlic
- • 2 pieces Red Asian Shallots
- • 1 stalk Lemongrass
- • 2 pieces Coriander Root
- • 10 pieces Kaffir Lime Leaves
- • 1/2 pieces Kaffir Lime Zest
- • 1 tablespoon Peanuts
- • 1 teaspoon Shrimp Paste
- • 2 teaspoons Coriander Seed
- • 1 teaspoon Cumin Seed
- • 1 teaspoon Salt
Instructions
- 1 Soak chilis in warm water for 10+ minutes
- 2 Trim lemongrass (remove outside layers, woody end) and dice finely
- 3 Blend all the curry paste ingredients, adding some of the chilli water to combine
- 4 Save half the paste and freeze
