Authentic Thai Penang curry paste with rich, complex flavors

Ingredients

  • 10 pieces Dried Chilis
  • 40 grams Galangal
  • 8 cloves Garlic
  • 2 pieces Red Asian Shallots
  • 1 stalk Lemongrass
  • 2 pieces Coriander Root
  • 10 pieces Kaffir Lime Leaves
  • 1/2 pieces Kaffir Lime Zest
  • 1 tablespoon Peanuts
  • 1 teaspoon Shrimp Paste
  • 2 teaspoons Coriander Seed
  • 1 teaspoon Cumin Seed
  • 1 teaspoon Salt

Instructions

  1. 1 Soak chilis in warm water for 10+ minutes
  2. 2 Trim lemongrass (remove outside layers, woody end) and dice finely
  3. 3 Blend all the curry paste ingredients, adding some of the chilli water to combine
  4. 4 Save half the paste and freeze
